I'm new to this and doing something wrong. Do I need to compile the patched LLVM and the latest Mesa from git? Or is it sufficient to recompile Mesa 10.1.... also not quite sure, how to force my system to use the modified stuf without breaking things.

I would recommend using the LLVM branch plus the latest Mesa code from git. To avoid breaking your current system, you can install LLVM to a non-standard path and then pass the --with-llvm-prefix=/path/to/llvm to mesa's configure script.
